Welcome to the Zafiro Hotels kitchen! Today we bring you a very special dish: chaufa fried rice. This dish has its origins in Peruvian cuisine, but with Chinese influences. In fact, the name of the dish means fried rice in Chinese.
It is a dish that combines both Asian and Peruvian influences that you can now find on the new menu in our Tastes & Sushi Bar restaurant in our Palace hotels. The Head Chef of the new 5-star Zafiro Palace Andratx Hotel, Jan Rene Brack, explains in this video the ingredients that are in the dish and how it should be prepared. We hope you like it!
Ingredients (serves 2 people):
- 250 g cooked basmati rice
- 200 g diced chicken breast marinated in char-siu sauce (or soy sauce)
- 20 g green onion
- 2 teaspoons ginger
- 40 g chopped red pepper
- 2 teaspoons coriander
- 20 g minced peeled garlic
- 2 large eggs
- 20 ml soy sauce
- 2 tablespoons sunflower oil
- Salt and pepper to taste
- Oyster sauce (optional)
- Sesame oil (optional)
Method:
- Marinate the chicken in char siu or soy sauce for 20 minutes.
- Cook the rice and reserve.
- Make a simple French omelette, cut it into pieces or strips, and reserve.
- Chop the red pepper into squares, chop the chives, and chop the ginger and garlic.
- Heat a frying pan or wok over medium heat with the two tablespoons of oil and add the vegetables, garlic and ginger. Sauté about 3 minutes.
- Add the chicken (previously marinated) and sauté for three minutes along with the vegetables.
- Heat up the pan and add the rice, the omelette and a splash of soy sauce, and mix well.
- Turn off the hob and serve hot. Bon Appetite!
