“The cocktail is love at first sight. A sensory experience that stimulates all five of the senses”. Rafa Martín, one of the most famous mixologists in Spain, has not the slightest doubt. So that’s why he wanted to create an entire journey full of exceptional, surprising and unforgettable experiences when he designed the cocktail menu for the Zafiro Palace Andratx.
A new flavour, a surprise ingredient, a celebration, a fleeting moment. Each of the different proposals on the menu has its own particular history and unique personality. As Rafa likes to explain, “these are much more than just drinks”. To better understand all the secrets behind these delightful cocktails, we had the pleasure of sitting down with Rafa so that he could tell us a little more about the seductive process that begins well before a drink reaches your table.

A journey for all the senses
“First, the presentation." Rafa Martín has no doubts at all: “presentation is really important” because it sparks our imagination and entices us to savour the cocktail before we’ve even taken our first sip. "Then the sense of smell comes into play, as we also perceive the aroma before tasting.” And then, step by step, the process of tasting the cocktail begins. A process that arouses different feelings that make every sip a truly special experience and invite you to enjoy a journey for all the senses.
“Next comes the taste, the factor behind roughly 80% of our guests’ satisfaction with their cocktail. In fourth place is the sense of touch, as elements such as the edge of the glass also play their part. And finally the sound, through the crunchiness of the ingredients”. For Rafa Martín, this sensory journey is a meticulous process in which each cocktail is crafted with a unique blend of ingredients and passion, giving rise to unrepeatable sensations that enhance the entire experience.
How to design a cocktail
Just like when you’re making a meal, when you design a cocktail, the order of the different steps to take in preparing the cocktail is really important. The alcohol goes first, followed by the juices and soft drinks, for example. According to Rafa Martín, we also have to pay very special attention to both the density and temperature, to make sure we "strike a perfect balance”.
The ritual of actually making the cocktail also influences the whole experience. The famous sound of the cocktail being mixed in the shaker, the movements and gestures of the person preparing it, and obviously the very special moment when you get to taste it alongside one of the spectacular pools at the Zafiro Palace Andratx, with views of the wonderful coastline of Camp de Mar.
