4 typical Mallorcan recipes to have fun cooking at home

Mallorcan cuisine is based on the typical Mediterranean diet, a tasty, nutritious and varied combination of ingredients such as vegetables, fish, seafood and meat prepared with olive oil, aromatic herbs and spices. The result is a collection of well-known, exquisite and colourful dishes.

 

The chefs at Zafiro Hotels suggest four typical Mallorcan recipes  that you can easily make at home and with your children. A great way to have fun and eat healthily!

Tumbet, a landscape of colours

 

This dish is very similar to the French ratatouille, although it’s prepared in a different way. It’s a very popular dish in summer, although it can be made all year round. The ingredients are: courgettes, aubergines, potatoes and a tomato sauce with red peppers.

 

All the vegetables are cut into quite thick slices and fried in a pan with plenty of olive oil. They are then layered one on top of the other in a baking tray, first the potatoes, then the aubergines and the courgette. They are then covered with a tomato sauce with red peppers to which a few garlic cloves and bay leaves have been added.

 

You can serve tumbet with a grilled steak or fish. It’s also fantastic with fried eggs!

 

 

Coca de trampó, Mallorcan-style pizza

 

Coca de trampó is a savoury type of flatbread similar to a cheese-free Italian pizza which is topped with a salad made of tomato, green pepper and onion. This salad is what the Mallorcans call trampó.

 

Prepare a very fine dough with the following ingredients: a medium-sized cup of oil and another of water, an egg, a tablespoon of lard, a little yeast and a pinch of salt and bicarbonate. All the ingredients should be mixed well and flour added little by little until the dough has a consistency so that it doesn’t stick to your fingers.

 

While you let the dough rest for a while, you can turn on the oven and prepare the vegetables: 2 ripe tomatoes, 2 green peppers and 1 large onion. Cut the vegetables into chunks and season with salt and plenty of olive oil.

 

Roll out the dough and place it on a baking tray just as if it were a pizza, place the trampó on top of the dough and bake in the oven.

 

You can use the same dough to make similar dishes such as:

  • Vegetable coca: replace vegetables with spinach, parsley and chard. Add some anchovies or sardines. A delicious pleasure!
  • Pepper coca: cover the dough with lots of roast red peppers and then place fillets of loin pork on the peppers.
  • Onion and sobrasada coca. Follow the same process and top the dough with a generous layer of finely sliced onion (previously softened in a frying pan for about 15 minutes) and a few pieces of sobrasada. If you don't have sobrasada, you can also use chorizo. This will definitely be a big surprise for your family!

 

Tumbet

Crespells, for those with a sweet tooth

 

Don’t miss the recipe for one of the most typical biscuits in Mallorca: crespells. These sweet cookies in different shapes are very typical at Easter, although you can find them all year round in almost every bakery on the island. They are really easy to make and kids love to join in and make crespells.

 

Ingredients:

  • 100 g of lard
  • 100 g of sugar
  • 20 g olive oil
  • 60 g orange juice
  • 1 egg yolk
  • 500 g of flour

 

Mix the olive oil and lard with your hands until the butter is well mixed in. Add all the rest of the ingredients except the flour and keep mixing until you have a consistent dough. Add the flour bit by bit. You can knead the dough by hand or with a mixer and then let it rest for about 15 minutes.

 

Roll out the dough with a rolling pin and make sure it’s quite thick. Use standard cookie cutters to make the crespells or let the children create their own shapes. Bake for 10 to 15 minutes at 180 degrees centigrade until golden. Once out of the oven, you can also sprinkle them with a bit of icing sugar if you like. Enjoy!

 

 

Majorcan-style fish

 

A typical, tasty fish recipe which can be made with any type of white fish such as sea bream, hake, sea bass, etc. The fish is cooked in the oven along with vegetables, normally chard, spring onions, leeks, onions and parsley.

 

Wash the vegetables well, cut them into fairly large pieces and let them drain. Place a layer of peeled and sliced potatoes in a baking tray and drizzle them with olive oil and add a sprinkle of salt. Place the fish on the potatoes, also seasoned with salt and pepper.

 

In a large bowl, season the vegetables with a good splash of olive oil, sweet paprika, salt and pepper, and add some pine nuts and raisins before placing them on top of the fish. If you want, you can add some tomato slices on top of the vegetables before putting everything in the oven. Bon appetite!
