The perfect recipe for the summer season

If Mallorca were a cocktail, it would be “something very Mediterranean, very citric, very cosmopolitan. Something sweet, easy to drink and full of fun. Maybe a classic Gin Fizz or a Tom Collins”. That’s how the mixologist Rafa Martín, bronze medallist at the World Cocktail Championships and designer of the cocktail menu at Zafiro Hotels, imagines it. 

  

Piña Colada, Cosmopolitan, Daiquiri, Aperol Spritz... there are so many alternatives and so many different flavours. In this article we will suggest some of the best options you have for raising a glass to the summer and celebrating all those unforgettable happy moments shared with others on the shores of the Mediterranean. Rafa himself accompanies us on this journey with his personal recommendations. 

 

And the drinks are prepared by Kiko Machado, bartender at the Zafiro Palace Alcudia, suggesting several cocktail recipes that will help you beat the heat and also make you feel like you’re on on holiday by the sea. That’s if you’re not already, of course.

Summertime is cocktail time

Each cocktail is a sensory experience, designed to enhance your holidays. Our bar menu offers something for every taste—whether you prefer timeless classics like the Bloody Mary or Mojito, or bold, unexpected blends that will win you over from the very first sip. Below is a handpicked selection of summer favourites, expertly curated by their creator, Rafa Martín, and prepared to perfection by our exceptional bartender, Kiko Machado. 

Zafiro Cocktail (gin, lemon, blue curaçao, ginger beer and grapefruit foam)

  

Rafa explains that our Zafiro Cocktail perfectly reflect the colours and essence of Zafiro: hotels on the beach in an exclusive and beautiful natural environment, with a Mediterranean and tropical climate and the most elegant and refined decoration.  

 

Preparation:  

  • 5 cl of dry gin 
  • 2 cl of blue curaçao 
  • 2 cl of lemon juice 
  • 2 cl of coconut milk syrup 
  • 4 cl of ginger beer 
  • 3 cl of pink grapefruit foam 

 

The combination of ingredients makes all the difference: blue curaçao adds colour and a hint of aphrodisiac with bitter orange; the grapefruit foam is very attractive visually and also adds flavour; and ginger has that spiciness that makes it more fun and, above all, very easy to drink. 

 

 

Canonita Spritz by Zafiro (Canonita, grapefruit soda and ice) 

  

Canonita is a Mediterranean aperitif from Mallorca, made with the best orange peel. Made from the oranges grown in the Sóller region, it’s a very refreshing and fruity cocktail.  

  

Preparation:  

  • Fill a big wine glass with ice  
  • 5 cl of Canonita  
  • 5 cl of Fever-Tree grapefruit soda  

  

Stir from the bottom upwards and garnish with half a slice of dried grapefruit and a sprig of rosemary.  

  

  

Negroni Porto (gin, Campari, red vermouth and port wine) 

  

Almost everyone knows how great a Negroni is. But what if we add a little Mediterranean touch to make it even more special?   

  

Preparation:  

  • 3 cl. Mallorcan gin
  • 3cl Campari
  • 3 cl. Muntaner Rojo, a red vermouth made in Mallorca
  • 1 cl. Oporto Bandeira port

  

Place the ice in the glass and let the glass cool down. Then add the ingredients. Garnish with a dried Mallorcan orange peel.

Lifestyle

Moscow Mule (vodka, lime, fresh ginger and cucumber, sugar and ginger beer) 

  

The signature touch added to this international favourite comes with the cucumber, which also adds a lot of freshness. The key is to mash the fresh cucumber in the shaker together with the ginger. The result is a very peculiar flavour, full of fun but also with an elegance you cannot fail to enjoy. A very refreshing cocktail thanks to the use of a little ginger to add some zing.  

  

Preparation:  

  • 5 cl. KM.1 Premium Mediterranean Vodka  
  • 2 cl sugar syrup  
  • Juice of half a lime  
  • 6cl ginger beer  
  • 1 slice of ginger 
  • 2 slices of fresh cucumber  

  

Crush the ginger and cucumber and add all the ingredients except the ginger beer. Shake to mix. Pour the mixture into the chilled glass with ice. Add the ginger beer, stir well, and garnish with a dried lemon.  

 

 

Dark Night (black vodka, blackcurrant syrup and orange juice) 

 

The Dark Night cocktail is a very popular choice at our 4-star hotels. A perfect drink to accompany a peacefully and balmy Mediterranean summer evening. 

 

Preparation:  

  • 5 cl. Eristoff Black vodka
  • 5 cl. Caiman blackcurrant liqueur
  • 5 cl. orange juice
  • Ice 
  • Peppermint to decorate 

 

Fill the glass with crushed ice. Add the black vodka, orange juice and blackcurrant. Mix well in the glass. Decorate with a peppermint leaf and enjoy! 

 

 

Pina Colada (rum, pineapple juice, coconut milk, cream and coconut foam) 

  

A fantastic Pina Colada is also a must every summer. Rafa Martín's creation for Zafiro is a twist on the classic recipe, adding a special coconut foam that accentuates the tropical influences. A cocktail that is full of flavour and with an elegant appearance. 

 

Preparation:  

  • 5 cl. White rum 
  • 8 cl. Fresh pineapple juice 
  • 4 cl. Coconut milk 
  • 2 cl. Cream 
  • Coconut foam (for decoration) 

 

Put all the ingredients and some ice into a cocktail shaker. Shake, shake, shake and then pour the mixture into a tall glass with some crushed ice. Top it off with some coconut foam. 

 

 

A cocktail for every occasion 

  

Both Rafa Martín and Kiko Machado agree that there is no cocktail which is perfect, but there is “a perfect cocktail for every occasion”.  

  

“Every moment has its particular needs. The body asks you to give it what it most needs, and you have to listen to it. Something sweeter, spicier, fresher…. Also why and with whom”, adds Rafa.
