Taking advantage of his visit to the Zafiro Palace Andratx to host a wine-tasting event organised together with the historic Ribas Winery, Juhé gave us an interview inviting us to discover the perfect pairing for some of the culinary delights on offer at the hotel.

Much more than a wine
Surprised by the variety and quality of the wines on offer at the Zafiro Palace Andratx, Juhé insists that it’s not at all common to see such an extensive wine list in a hotel. Not even in the big 5-star resorts. That's why his face says it all when he finds a bottle of Chateauneuf-du-Pape de E. Guigal from the Southern Rhône region of France.
When we ask him, he doesn't have to think twice: he would open that bottle to enjoy with an intimate dinner in a suite with a private pool and sea views. A moment to remember to accompany the succulent 800 gr Tomahawk steak for two prepared by the team of chefs at our Caliu Steakhouse.
The best wine pairings
For Juhé, the possibilities for pairing are as varied as the dining options at the Zafiro Palace Andratx, where more than 200 different new dishes invite guests on a journey through the most exquisite international cuisine without leaving the resort.
One of the best places to enjoy superior-quality ingredients and avant-garde techniques is the Mare Nostrum restaurant Juhé applies all his extensive know-how to gives us a few tips to help us combine the best wines from our cellar with the restaurant's exquisite dishes:
- A light white wine with a little salinity and floral hints to enhance the rich textured vegetables (tomato sponge, sweet potato purée, air of herbs…).
- A white wine from a cooler or cold climate aged in barrels to enhance the flavour of the lobster with citrus.
- A red wine with structure and the appropriate acidity to accompany the suckling pig confit with apple.
- A tawny port or aged sweet white wine with some acidity and complexity to go with the top dessert, La Sobremesa, a chocolate cigar filled with Cohiba mousse and a sweet herb liqueur mojito tart.
An extraordinary wine list
The wine list at Zafiro Palace Andratx is, as Juhé says, sublime and meticulously curated. Fresh whites, robust reds, delicate rosés, bubbly proseccos... all of them from the most prestigious wine-making regions.
Of course, there’s also no shortage of local wines from the best wineries in Mallorca, including Pla i Levante, Vi de la Terra and Binissalem, among other areas.
The variety of Spanish wines ranges from the robust reds of Castilla y León and La Rioja to the delicate whites of Galicia and Penedès. Not forgetting the most notable wines from Priorat, Ribera del Duero, Toro, Somontano, Rueda and other regions.
Among the international wines, the list includes first-class wines from Lombardy and Chianti in Italy, from the refined Rhône and Burgundy in France, the vigorous Barossa Valley in Australia, and the exotic Alta Uco Valley in Argentina.
