On World Tourism Day 2025, supported by the United Nations and celebrated this year under the title “Tourism and Sustainable Transformation”, we reaffirm our commitment to a tourism model that is both respectful and authentic. A fine example of this commitment is our agrotourism hotel Son Sabater by Zafiro, the latest jewel in the crown of the Zafiro Boutique Collection, with projects ranging from the reduction of emissions to supporting local farmers and suppliers.

New olive tree and carob tree plantations
In Sa Pobla, Son Sabater by Zafiro has taken a meaningful step forward with the planting of 1,500 olive trees (Arbequina and Picual varieties) and 600 native carob trees, emblematic of the Mallorcan landscape. Once mature, these resilient, low-water Mediterranean species will absorb up to 6 tons of CO₂ annually, contributing to the fight against the greenhouse effect.
Together with the estate’s existing 12 hectares of alzinar, they transform this historic Mallorcan country estate into a living project—one that beautifully blends tradition with environmental stewardship.
Our own organic garden
The Son Sabater by Zafiro organic garden is a direct bridge between land and kitchen. This season, it will have yielded over 1,000 kg of fruits and vegetables, delivered fresh to the restaurant table with full traceability.
Tomatoes, artichokes, aubergines, watermelons, melons, peppers... and Mediterranean herbs like rosemary, basil and mint, bring greater depth and character to Mallorcan cuisine—mostly traditional varieties rooted in the island’s culinary heritage. Everything is cultivated using respectful practices: from shredding pruning waste into natural fertiliser—avoiding burning and reducing CO₂ emissions—to maintaining a dedicated cistern that supplies water to the entire agritourism site, making it 100% self-sufficient.
Local and seasonal cuisine
Sustainability can also be savoured. Led by the young Mallorcan chef Lluís Cardell, the restaurant menu draws inspiration from local, seasonal produce: 30% of the ingredients are locally sourced, with 21% coming directly from the restaurant’s own garden.
“We want every diner to discover the essence of Mallorca in every dish—through a cuisine that breathes tradition and sustainability in every detail,” explains Cardell. “We make our dishes with local products like xeixa flour, Mallorcan oil, Mallorcan almonds, carob sauce and Mahón cheese.”.
“Our menu is designed to showcase fresh ingredients from our own garden—aubergines, tomatoes, watermelon—bringing true authenticity to the table.”
The result? A menu that captures the authentic flavour of Mallorca, enriched with the added value of home-grown produce—featured in signature dishes like the grilled vegetables or smoked aubergine Milanese.
Son Sabater by Zafiro, the first agrotourism of Zafiro Hotels and a proud member of the Zafiro Boutique Collection, celebrates two years since its inauguration, cultivating a truly distinctive tourism model. A typical 16th-century Mallorcan country estate, lovingly restored, now surrounded by new plantations that breathe life into the landscape, and a garden that already nourishes our guests’ tables. The goal of these activities is very clear: to offer visitors an experience that is both authentic and respectful, contributing to the shared creation of the tourism of tomorrow.
